Island Banana Bread

Ingredients:
  • ¼ Cup softened Butter
  • 2 Eggs
  • 1 Cup Sugar
  • 1 tsp Vanilla
  • 3 Tbsp Rum
  • 1 ¼ Cups Flour
  • 1 ½ tsp Baking Soda
  • ½ tsp Salt
  • 2 to 3 very ripe Bananas
  • ¾ Cup Macadamia Nuts
  • 1 to 2 Tbsp Turbinado Sugar for top







Instructions:

1. Cream together butter, eggs, sugar, vanilla, and rum; beat for 2 minutes.  (The alcohol in the rum will dissolve in the cooking process.)





2. Combine Flour, baking soda, and salt and add slowly to above mixture while beating.





3. Add bananas, mushing with a fork first if necessary; continue beating for another 2 minutes.





4. Chop nuts and stir them in by hand




5. Pour into a greased 8x8 in pan; sprinkle turbinado sugar over the top.





6. Bake at 350 for about one hour (until a toothpick comes out clean). Enjoy!
