Tia Katherina’s Chicken Fajitas

A Time-Tested Recipe That’s Easily Customizable to Your Taste

Enjoy this wonderful comfort food mild or a bit spicy, while encouraging the kids to mix and match their toppings.




Ingredients:
  • 1 package chicken breasts or tenders, about 1 1/2 – 2 lbs
  • spices:
    • 1 tsp granulated garlic
    • 1 1/2 tsp cumin
    • 1 tsp seasoned salt
    • 1 tsp chili powder
    • option A (spicier)> 1/2 tsp ground red pepper
    • option B (mild)> 1/2 tsp paprika & 1/2 tsp ground coriander
  • 2 TBSP olive or avocado oil
  • 2 TBSP lemon juice
  • 1 TBSP lime juice
  • 1 medium sweet onion, sliced
  • 1 medium red, orange or yellow bell pepper, sliced
  • 1 package medium-sized flour tortillas
  • Shredded cheese for topping
  • Fresh cilantro
  • Sour cream or plain Greek yogurt 













Instructions:
  1. Mix all your spices together in a large sealable plastic food container.  If your family likes spice, include ground red pepper as listed in option A.  If you prefer mild or have young children, substitute paprika and / or coriander, as in option B.  
  2. Add oil, lemon and lime juices and mix well.  If using chicken breasts, slice them into strips the long way.  If using chicken tenders, cut off the tough white tendon at the top of each piece.  Add the chicken to spice mixture, seal closed and give it a good shake to coat all of the chicken in the marinade.  Then flip the container upside down and place in the refrigerator.  Allow the chicken to marinade for at least 20 minutes, up to overnight, flipping the container over about halfway through.
  3. Warm a large skillet on the stove top, then pour the whole container of chicken and marinade into it.  Slice your onions and add, then slice your pepper.  Add the peppers when the chicken is almost cooked through, and the onions are translucent.  
  4. Warm the tortillas and set out the cheese, cilantro and sour cream in small serving dishes.
  5. Remove the fajitas from the stove before the peppers start to wilt.  Serve warm, allowing family members to customize their dinner with the toppings provided.  Additional topping ideas might include: salsa, guacamole, corn, avocado, or cojita cheese.  Try those next time!
